Canary Melon Jam

If we give someone a piece of bread and butter, that’s kindness, but if we put jelly or peanut butter on it, then it’s “Loving Kindness”.

Ingredients

  • 1 Canary Melon or Cantaloupe, roughly 2 lbs
  • 2 cups granulated sugar
  • 1 lemon (juiced)

Directions

  1. Cut the melon into slices and remove the seeds and skin (try not to cut too close to the skin as the flesh near here remains quite hard and crunchy). You should have about 2 pounds of fruit left;
  2. Chop the melon flesh into roughly 1-inch cubes and combine with sugar and lemon in a bowl;
  3. Let macerate about 6 hours or overnight;
  4. Place a saucer in the freezer to use for testing the jam setting later;
  5. Pour the melon and all its juices into a large heavy-bottomed pot;
  6. Bring to a rapid boil and cook, on high, for about 25 minutes or until the jam is set;
  7. During this time, check it and stir it often to make sure it’s not sticking or burning;
  8. If you think it is (or is close to) sticking or burning, check to see if the jam has set right away with the saucer test;
  9. To check if jam is set, place a blob of the hot liquid jam on the cold saucer;
  10. Wait a moment for it to cool then look at it;
  11. It should be wobbly; if you tilt the plate it should slide slowly; and if you poke it, most importantly, it should wrinkle slightly;
  12. If so, it’s done;
  13. If you prefer a smooth rather than a chunky jam, you can mash the fruit or blend with an immersion blender off the heat;
  14. Remove from the heat and spoon into sterilized jars and either process the jars (boiling the closed jar and its contents for at least 10 minutes) or seal and keep refrigerated;
  15. If refrigerating (and once opened), use the jam within a couple of weeks.

feedback when planning for the future.

Dear Parents/Guardians/Families:

We highly encourage you to complete the 5 Essentials Survey for your child’s school. Your feedback matters. We use this feedback to develop school improvement plans and activities to make continuous improvement. The data needs to reflect the voices of our parents in order to address/validate school concerns or support for existing programs.

Your honest responses are confidential and needed to better inform our upcoming goals and strategies we will be implementing for the 2021-2022 school year.

Please share your input through the annual Illinois 5Essentials survey! The survey is administered by UCHICAGO Impact and is based on the Five Essentials for School Success, an evidence-based framework developed by the University of Chicago.

The 5Essentials Are:

⤷ Effective Leaders      ⤷ Collaborative Teachers       ⤷ Involved Families       ⤷ Supportive Environment      ⤷ Ambitious Instruction

Steps To Complete Survey:

The survey takes about 10-15 minutes to complete; 

⤷ Select the necessary language to complete the survey (English or Spanish);
⤷ Enter the name of your county and the name of your child’s school;
⤷ Advance to survey questions;
⤷ Answer all applicable questions;
⤷ Click Submit Survey

Each school needs a parent response rate of at least 20% to receive a results report. Please complete the survey no later than April 2, 2021.
